Recipe: Brownies

Today I’m sharing a recipe for brownies because lets face it, Valentine’s Day deserves some chocolate even if you hate it…there’s no arguing with me on this because we all know it’s true.  My plans for today include working a 9 hour shift and then watching a scary movie at 10pm with some friends so I’m optimistic about it.

Anyway, I figured I would bake something for all of my lovely ladies at work today and brownies just seemed like the perfect thing, so here’s the recipe –

For this recipe you’ll need:

  • 1 (1 ounce) square unsweetened chocolate
  • 2 tablespoons butter (no substitutes)
  • 1 egg
  • 1/2 cup sugar
  • 1/2 teaspoon vanilla extract
  • 1/3 cup all-purpose flour
  • 1/8 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/4 cup semisweet chocolate chip

In a small heavy saucepan or microwave-safe dish, melt unsweetened chocolate and butter; stir until smooth. In a small mixing bowl, combine egg and sugar. Stir in the chocolate mixture and mix well. Combine the flour, salt and baking powder; stir into the batter until just blended

From there you’ll just spread your batter  into a greased pan. Sprinkle with chocolate chips. Bake at 350 degrees F for 15-18 minutes or until toothpick comes out clean. Let them settle for a few minutes and then take them out to cool on a wire rack.

That’s pretty much it. It’s super easy so even those of you who are not fabulous bakers can definitely pull this off.

What do you have planned for valentines day?


Lists: 21 before 22

A bit before my birthday I made a list of things I want to accomplish over the next year. I knew that I wanted to make a list of some sort of goals but wasn’t sure what it should consist of and how many goals to make but in my daily blog reading I saw this super cute and memorable list from Elsie of A Beautiful Mess. I decided to give the 21 before 22 a shot this year and see how it goes, it definitely seems like something I will continue for the next few (or 20) years, I’ve already started working on and accomplishing some already and it’s kind of nice to take a look at the list from time to time and get inspiration and a renewed sense of purpose on those days that are just blah and I’m sure in a few years when I have a collection of lists like this it will be fun to look back and see some of the things I did each year and how my goals change.

Some of these goals are somewhat silly and some of them I wrote down because if they weren’t on a list I would never ever do them, but that’s the whole point right? Right. I have so many other things that I want to do over this next year along with the 21 but this is a start to what I’m sure will be a wonderful year.

Recipe: Simple Sweet Scones

Sometimes I just really get a craving for scones with tea. I don’t know what it is, possibly fond memories of drinking tea with a friend, but tea and scones are just comforting and full of good thoughts for me. The first time I made scones was in Kentucky with a friend while taking a trip a couple years ago and since then I’ve often decided to make them to have with tea and brunch with friends or make extras to put in gift baskets. They are one of those super easy and completely versatile treats – sweet or savory the scone is downright good.

You’ll need: 2 cups of flour, 3/4 cup of sugar, 3 teaspoons of salt, 3/4 teaspoon of baking powder, 4 tablespoons of butter, 2 tablespoons of shortening, 1 egg, 1/2 cup of cream.

Mix together the flour, sugar, salt, and baking powder then cut in the butter and shortening and knead the mixture together. In a small bowl mix together the cream and egg and add them slowly to the rest of the mix. Continue to stir in the cream-egg mix until you get a nice dough (you may not need to add all of the cream)

From there you are pretty much done, you can add any type of fruit or goodies you’d like to your scones. I made some plain and some with dried cranberries (my favorite are plain scones with butter and honey…sooo good!)

I got a little hands-on and free formed the shape of my scones but you could cut them out like biscuits if you’d like.

Finally – Place your scones on a cookie sheet and bake at 375 for 10-15 minutes then eat them while they’re still warm!

A Photo An Hour: from my birthday

Friday was my birthday!! Yay! It was such a super fun and silly day. I’m still laughing about it, that day will definitely be a fond memory for a very very long time. I tried to take an photo an hour from the whole day but I kind of slacked, I got a few though and I thought I’d share them with you so here are some little tidbits from my day: 

11am – after getting ready and spending some quality puppy time I’m ready to start running some errands. It was a super warm February morning.

12pm – waiting in the car at the DMV to renew my license. The line was soooo long.

1pm – after waiting patiently I got a new license and went to start celebrating my birthday

2pm – I missed this picture. Sorry! I had some yummy lunch with my mom

3pm – went a little over board and bought some cupcakes at babycakes. (just so you know we shared them throughout the day and still have some leftover) They are so stinkin pretty though aren’t they?

4pm – went to visit my sweet grandparents

5pm – bought some tiny bottles of alcohol to put in a gift basket for my friend Emilee. (we share a birthday!)

6pm – got ready for a birthday dinner with friends.

That was as far as I got with the pictures. I had a supremely lovely day and after the pictures stopped (I forgot to bring my camera) Emilee and I had a joint birthday dinner with a bunch of friends and then a hilarious night that lasted until the morning.

5 Things I’m Loving Right Now: Shoes


I’m going through a shoe phase. Shoes have always been sort of an after thought for me but I’m trying to get better about it and expand my shoe collection. I would just love to have everyone of these shoes in my closet. So pretty!

Shoes: ruche, astoria strappy heels – modcloth, shape of your heart heel – anthropologie, pinch pleat heel – modcloth, cinquain sweetie heel – modcloth, walk of ages heel.
