Recipe: My Favorite Chili

This is my absolute favorite recipe for chili, it’s crazy delicious, a bit odd, and has lots of good stuff in. Plus it takes about 15 minutes to make which is a huge plus.

You’ll Need: 1 can of Kidney Beans, 1 can of Cannellini Beans, 1 can of Garbanzo Beans, 1 can of original Rotel, 1 can of Golden Hominy, 1/2 cup of water, 2 tablespoons of milk or cream, 1/2 tablespoon of garlic, 2 cups of cheese (I use a 4 cheese mexican blend but anything that melts well will work), 1 tablespoon of chili powder, 2-3 tablespoons of cumin (my favorite!), Salt, and I added some chipotle seasoning but that’s not really necessary.

To Make – Go ahead and open all of your cans and grab a large pot. Pour in the Rotel and add the garlic and all of the spices and let them simmer for about five minutes. Pour in all of the beans and the water and let it all warm up until just before a boil then lower the heat and stir in your cheese a little at a time making sure it’s completely melted and well incorporated. Stir in your cream once you’ve added about a cup of cheese to help smooth things out. Add salt to taste and serve with chips, corn muffins, cheese, sour cream, and anything else you can think of.
